Chef Justine Bordet, as Senior Sous Chef, plays a crucial role in crafting and refining the menus, supervising the kitchen team, and ensuring that every dish reaches its full potential. These include managing the high-end Test Kitchen by Luke Dale-Roberts in Cape Town, opening three successful restaurants with the Luke Dale-Roberts group, and leading the operations at the Michelin-starred Trinity restaurant in London.
Assistant Restaurant Manager Antoine Lebrun brings his international experience to the team, having previously held management positions at the luxurious Ritz-Carlton Hotel in Portugal. His dedication to exceptional service is reflected in his role at the German Gymnasium, where he oversaw the operations of the cafe, bar, and restaurant.
Assistant Restaurant Manager Florent Marianne brings his wealth of experience in the hotel and restaurant management industry to ensure smooth operations and impeccable service.
